The heavy hitters are really just a good white cheddar and a gruyere (which melts down amazingly well), but there is also Romano, Parmesan, and a little bit of medium cheddar sprinkled over the top (mostly for color, if I'm being totally honest). How do you recommend reheating this? This recipe is definitely for those that prefer the creamy side of mac and not the just coated in cheese. Second of all its far too grainy. I did use 2% milk instead of whole milk and less butter and flour (3 less tablespoons butter and 3 less tablespoons flour), but that was because I knew the calorie content of this recipe has to be very high.
